caramelized carrots, fennel seeds and mint

For 4 people:

800gr of carrots

2 tablespoons of honey

2 tablespoons of extra virgin olive oil

1 teaspoon of wild fennel seeds

Fresh mint

Salt and pepper

Turn on the oven at 250 °

Peel and wash the carrots without removing anything.

Cut them in two lengthwise.

Place them in a bowl in which you put the honey, oil and fennel seeds.

Turn them with your hands and place them in a low-sided pan that can contain them all on one layer and bake them for an hour.

When cooked, season with salt and pepper and season with mint.
